"I make 2- and 4-loaf batches using Laurel's basic loaf recipe with one additive, and that is 1/2 tablespoon of wheat gluten per loaf. Then I knead in the Bosch at the lowest speed for 6-7 minutes, using the windowpane test to tell when it's done. Then I transfer the dough to a glass bowl for the first rise. When that's finished I gently punch it down and shape the loaves. One more rise and then into the oven. I get a perfect, beautiful, light and fluffy sandwich loaf every time that even passes the fold test."
